A great color for your wedding anniversary invitations would be red. Red is a strong deep and romantic color. Why not have a red background with silver text?

Using a pale blue or green is always a nice choice, if you are a younger couple. For a more mature couple a light gray or gold would be nice. The final choice however should always be what colors you and your spouse prefer together as that matters more than what anyone else thinks.
