Eucalyptus trees such as the Blue Gum tree are among the most famous shredders. Their bark is famous for shredding and peeling and promoting fires. Another giant that will shred is the Coastal Redwood tree. The Paperbark Maple is a much smaller ornamental that is grown for its lovely shredding bark.

There are equite a few trees that shed their bark, either through the growing process, disease or through the life cycle of the tree. The most prominent tree would be the birch. Others are the sycamore, red bud, hickory, silver maple, shagbark, and Scotch pine. When young trees of these species lose bark, it's time to call a professional.

Definitely Birch. It comes off pretty easily and will shed if its not in the best condition. The bark is like white paper almost and will curl off when it wants to shed it off.

The Sycamore tree is the most common they will shed from the time they are tiny and they will continue to do so until they are either vut down or they die from natural causes.

The Eucalyptus, Crepe Myrtle, American Sycamore, and the London Plane Tree, (the Sycamore and Plane Tree are sometimes mistaken to be the same; they are different)are four trees that naturally shed their bark periodically, and sometimes are planted for this reason only.

The Sycamore tree sheds bark, and so does the Maple tree, the river birch tree, the crepe myrtle tree, the elm tree,and the silver maple tree. They do this as it ages.

There aren't very many because bark is the trees protective layer. I believe the paper willow drops sections of white bark. Some aspens will drop barck. I know they harvest cork off trees but that may not be the same as shedding.
