A few things, actually. Prairie oysters is another name for Rocky Mountain Oysters, AKA bull testicles (which can actually be pretty tasty when prepared properly -- usually battered and fried). Prairie oyster also refers to a hangover remedy. There are a variety of recipes for this, though they all include a raw egg.

Prairies Oysters are also called Rocky Mountain Oysters. They consist of buffalo, boar, or bull testicles. They are usually peeled, coated in flour, pepper and salt, sometimes pounded flat, then deep-fried. It is usually served as an appetizer. It's popular in Canada and Northern States.

Prairie oysters are the testicles of a bull. They are 'harvested' and usually served fried. This dish is popular in the midwest, and vaguely resembles oyster shells in a geometric sense, which explains the name. In Colorad, they are referred to as Rocky Mountain Oysters.
