Do a lot of research before you go. Find out where you can get discounts or deals for large groups. Call ahead to hotels, restaurants, and attractions you'd like to visit and ask them about lowering rates for your group.

I would assign "teams", so that each team can make sure everyone is accounted for at rest stops and meals. Bring games, snacks, books, magazines.
