Yes. There are breeding organizations and registries, as well as standards and fancy mice shows. Fancy mice are almost always regular house mice, Mus musculus.

You betcha! "Fancy" mice really are just domesticated mice that someone has bred selectively for some trait. Rodents are easy to breed and have fairly short lifespans so they're ideal for selective breeding attempts.

Yes, there are many places that breed and sell fancy mice. Litters have as many as 20 or more baby mice. They must receive optimal care in order to survive adulthood.

Yes of course! Fancy mice is just a cool word for domesticated house mouse. Breeding fancy mice means breeding a litter of some kind of mouse. Pet store mice could be considered fancy mice.
