I don't know of any specific lists, but oftentimes it comes up in interviews and profiles with magazines. Try a google search. One thing that makes it very easy is search the "[actors name] vegetarian" or "vegan". If they are, they'll usually talk about their favorites.

There are a few. Simply look it up on a search engine and you will receive plenty of results. For example, Bob Dole really does like Dole canned fruit. Isn't that crazy?
