Your body can get into a vicious itch cycle that is hard to break. Try a couple of nights of bendryl, if you can stand the sedation. Use lots of aloe lotion. Avoid hot showers, the sun and any more sunburns!

It could be that you did some serious damage to your skin and if that is the case you may want to go see a doctor about it to have it checked out.
