Wild game meats can be kept in the refrigerator for two to three days with moisture proof plastic wrap or placed inside a storage bag. If its going to be longer than that, it really should be frozen.

You can keep it as long as you like if you freeze it,but I guess you can not wait that long since it is very tasteful.
