Tortillas are virtually tasteless. Leaving them in the freezer shouldn't change the taste of them. They can be frozen for years if you package them correctly and keep them from getting freezer burn. Freezing tortillas for long periods of time will cause them to be very brittle. When you go to use them, heat them with a little water.
