What should I know about freezing mango?

Mostly freezing mangoes may from iceinside the pulp which may reduce the taste of the fruit. We usally immerse the fruit in sugar syrup and place it in the fridge.

Choose fruit not overripe. Peel, slice, mix in one tablespoon sugar for each mango. Freeze up to six months in plastic bags. For longer period, freeze in sugar syrup. Dissolve cup sugar in two cups boiling water. Cool. Put slices in container. Cover with syrup to l" from container top.

Dip the mango in boiling water to loosen the skin. Peel, slice and sprinkle Fresh Fruit granules. You can freeze the mango wet with sugar syrup or dry. Put in a freezer or freezer container and put in the freezer for future use.

Mango's often become very mushy when frozen. the best bet is to cut it into chunks and get is frozen quick. Only time will tell if it turns out alright.
