Red blood cells are flexible (in order to bend to fit into capillaries) biconcave discs. Their shape allows for maximal surface-area-to-volume ratio for faster exchange of gases.

The idea behind the shape of red blood cells is two fold. First it has a high surface area to volume ratio which is optimal for diffusion. Second the shape is very pliable to squeeze through capillaries.
