How does a white stock compare to a brown stock?

They use different ingredients. White blends the onions, carrots and celery with chicken bones; brown blends the vegetables with veal bones and sometimes added tomato paste.

White stock is made by using raw bones and white mirepoix. Using chicken bones is most common for white stock. Brown stock is made by roasting bones and mirepoix. Using veal bones is most common for brown stock. Tomato paste is often added to help make brown stock.
