One way to get your dog to stand still is to place him on a platform where he would lose his footing if he moves around. While on the platform, give a command such as "hold" while simultaneously giving him a tastey treat to keep his attention. Start with short sessions and gradually lengthen the time.

When he is sitting you take your hand to his inner leg at the back and you gently push to where he is standing and say Stand, stay, goooood booooooooy.

I will always use a firm tone "stay" command on my dog. But to teach him what "stay" means, I would always stand in front of him with a treat, and if he walks over, I will "pat" the palm of my hand onto his chest to push him back and yell out "stay". Repeat these steps until he understands.

Training of any dog varies with the individual dog. There are some very good books and videos one can use and some training classes may help as well.

Practice, practice, practice. Dogs need a lot of time and patience especially if they are a naturally antsy breed. Repetition accompanied by treats is how you are going to accomplish this trick. Telling your dog to "sit" and "stay" multiple times. Eventually work your way up to walking away and him staying.
