This depends on whether your hard drive is an official "attatched" hard drive or a second party external. For the former the process is quite simple and should be automatic whenever you want save in each game. Second party hard drives require different instructions depending on the individual model.

Games usually have an auto-save feature that automatically saves it to the hard drive, also games have a "save" option that immediately saves to the hard drive once selected.
