How do you make homemade mayonnaise?

I want to make it to impress someone.

In the food processor, add 1 tablespoon white wine vinegar, 1 egg yolk, 1/2 teaspoon salt, and 1/2 teaspoon mustard powder. Turn the machine on and slowly add 1 cup vegetable oil until mixture is thick and emulsified, finish with squeeze of 1 lemon. You can also use a whisk.

Whisk egg yolks and lemon juice together and add 1C oil a little at a time, whisking enough to keep oil emulsified. Season with salt and white pepper.

Mayonnaise is simply an emulsion made by whisking together the correct proportions of egg and oil. A good recipe for a basic mayonnaise is Alton Browns Mayonnaise on the FoodNetwork website. If you want something a little more fancy, search for FoodWishes Garlic Aioli - it's amazing!

Start with two large egg yolks, 3 tablespoons of lemon juice, pinch of salt and white pepper and 1 cup of vegatable oil. Mix everything but the oil together, then while wisking, add the oil a little at a time.
