You can melt chocolate on the stove top and fill a pastry bag (when it's cooled slightly) to create designs to garnish a dish. You can also create molded garnishes using a cake or garnish mold, which you could buy at a baking supply store. You could even use creatively shaped ice cube trays as molds.

The easiest way to prepare chocolate garnish is to shave chocolate with a vegetable peeler. You can also fill plastic candie molds with melted chocolate and let harden.
