The only way to cure meat with celery is with the juices. The stalk is useless for curing meat. Once the juices are extracted and concentrated then the nitrates and salt will cure the meat over time.

You should cure meat first by taking the meat from the refrigerator and washing it completely. Cut off any unwanted, fatty sections. Place meat in a large container or bowl that has a few inches of water in it. After that, cut up celery in inch increments. Place celery in bowel, and leave bowl in refrigerator for 3 hours.

You cannot use the stalks to cure, you must extract the juices. These juices are considered a "natural" nitrate, which is necessary in the process.
