There is a small sensor in it, that when activated by the mercury that is similar to a thermometer, it triggers the sensor. Once the trigger is activated, an electrical connection is established which tells your heating or cooling system to turn on. The reverse occurs to shut them off.

most thermostats work off of temperature. some thermostats operate in water and others operate in air. when the air or water temperature reaches a certain level, it activates the thermostat to do what it needs to do. then the desired temperature is acheived. thermostats control many different things such as a/c and heaters.
