Going counter-clockwise, pop out the winding crown. Pull it to the final notch. This is the setting position. Wind clockwise to the proper time. Then screw the winding crown down until it is tight.

The best way is to call your valet or personal assistant and ask them to ensure it is set with the correct time, if that is not possible the next best method is to gently pull out the winding stem, turning clockwise to move the hands to the correct time.

To set a rolex watch, you must first unscrew the crown ( the side bump with a Rolex crown on). Once unscrewed, the crown has a number of positions and functions depending on the model. Usually there are at least 3. The first position is the date adjustment, the second to manually wind and the third to set the time.
