If you want to modify the engine's coolant temperature sensor, you can remove it and replace it with one designed for a vehicle with a temperature reaction range you desire.
You don't want to modify the coolent temperture sensor. it can cause over heating and lead to shorter engine life or it can cause to much cooling and crack your engine block
