How did Dole get started canning pineapple?

Did they originally just sell fresh fruit?

Dole started in Hawaii. The company owned pineapple plantations near railroads, making it easy to ship their fruit to Hawaiian ports. When the United States annexed Hawaii, Dole started shipping pineapples to the U. s. Mainland.

Dole was founded in 1851 as the Castle & Cooke company, doing shipping, railroad construction, sugar production and seafood packing in Hawaii. In 1932 they bought a large stake in the Hawaiian Pineapple Company (founded in 1901 by James Dole), which got them into the pineapple business.
