If the guy respects you he will take care of you. He will do things which please you and behave in a very gentlemanly manner. If he likes you the way you are and would not want you to change for him, he cares for you.

A man respects you if he speaks highly of you. He will listen to what you say and trust your judgment.

Pretty much the same way you tell if anyone respects you. If he's putting you down, whether it be about your intelligence, looks, or personality, he's disrespecting you. If he doesn't take your feelings into account, ignores you, patronizes you, etc he's disrespecting you. Follow your heart and your own instincts.
