Scrapbooking encourages organization as you have to keep track of a large number of supplies and photos in order to be a successful scrapbooker. Scrapbooking is also a great way to teach about family history - in putting together an album of your ancestors, you will learn a lot about them and the lives they led in the process.

You could certainly turn a scrapbooking session into a lesson on organizing. Benefits would be learning how to put items in chronological order. Other organizing ways would be by picture type, locations, styles, holidays. Scrapbooking can certainly aid in organization of items.
