Do you refrigerate tahini after opening?

I bought some in a jar, but the jar doesn't have instructions.

You should always refrigerate tahini after opening, since it is made from sesame and might not have preservatives. It is frequently imported from the Middle Eastern countries. If not refrigerated it will become rancid.

I always refrigerate tahini, because it is a long-term item and when it goes bad, it goes really, really bad. Refrigeration also doesn't affect the usability of the tahini, so I see no reason at all not to keep it in the refrigerator. Enjoy your delicious tahini-based recipes!

Yes. If you do not refrigerate tahini within several hours of opening, it will go bad. The oil will separate from the rest of the sauce and eventually it will begin to smell. The same is true of hummus and most sauces. Make sure not to freeze it, thoug h.

I would guess that unless you've canned it (e.g., sterilized the tahini and put that into a sterilized jar), or dried it, you're going to have to refrigerate it -- it certainly won't hurt.
