Refrigerating a banana will put off the ripeing process about 3-5 days, however the peel will still turn brown and some ethylene will be produced.

They will produce ethylene gas, but at a much lower rate. The cooler the temp the slower the process will occur. The process occurs much faster in a normal home temp.
