It is truly funny you are thinking to cap the hip roof. In fact you need not cap the hip roof at all. Instead, make sure that you adequate drainage so that the water doesn't enter. You may cap the pitched roof and replace shingles in the hip portion. Hey you are done.

Hip roofs are just where a third 'seam' comes in at a diagnoal to a regular pitched roof. You don't need to worry about capping the 'hip' portion of the roof, you need to make sure you have adequate drainage. Make sure to cap the pitched roof and replace shingles in the hip portion regularly.

You want to make sure that the caps on you hop roof do not leave big gaps. Small gaps are okay because the water runs away instead of towards on hip roofs. Check with the manufacture for more details on how to use their product and do the job correct;y.
