Items with simple straight lines and not many pieces will be easy for a beginner. Some examples are a tote bag, apron, a-line skirt, pot holder, or throw pillow.
When I first learned to sew, the first thing I made was a simple apron with pockets on the front. There are lots of easy projects available for free on the internet. Perhaps a simple fleece hat would be good to start with or a simple stuffed animal.
