Olive oil fries things at a lower temperature than most vegetable oil - not a good substitution. But for salad dressings, olive oil works better than most vegetable oils.

Olive oil can be substituted with the pure coconut oil or with the pure mustard oil or with the pure sunflower oil. Any of the the three or a combination of any two or three of the above is a good substitute for the same.

I always have and everything works out fine. You can even substitute other things for vegetable oil as well. In cakes and sweet breads I often use half the oil called for and use applesauce or some other pureed fruit for the other half.

Olive oil can be substituted for vegetable oil in many recipes. However, be aware that olive oil has a richer, stronger flavor than most vegetable oils, which tend to have a more neutral taste. Consider using an olive oil labeled "light" or "mild" to prevent the olive oil flavor from overwhelming your recipe.
