Yes, you can open an email without triggering the other person's return receipt. If you are using Microsoft Outlook, you will be given a notice whether to send or skip the return notice to the email sender. This can be done by choosing not to allow the return notice to be sent.

Yes this can be done if your email system allows you to be notified that a return receipt was requested and lets you choose whether or not to do allow the return to be sent. Outlook permits this for example. You may also be able to forward the message to another email account and skip triggering the notice.
