How do I know it's the right time to harvest winter squash?

When you tap or thump the squash it should have a hollow sound. That is a sign that is is ripe and ready for picking. My Grampa always said not to pick them until after the first good frost. He covered them with hay to protect the fruit.

Once the squash has turned a rich, deep solid color and the rind is hard (not soft at all) then you will know it's the right time. Leave 2" of stem and harvest before frost hits.
