It depends on what the purpose of the communication is. If this is professional, calling is probably best. If it's about a relationship, it's usually safe and acceptable to e-mail the person since most people are more technological now a days and have blackberries to check e-mail on the road.

Yes, it is acceptable to email someone you've only met once. However, I wouldn't be too familiar -- you may want to reference the conversation you did have.
