Are there different kinds of potatoes? Do different brands mean high/lower in starches b/c of where from?

Yes, there are different kinds of potatoes, which range in shape, color and sugar content. Yukon golds contain more sugar and the higher sugar content means they contain more starch.

It is not really a brand but a type of potato, that depicts its characteristics, the small red or white ones have less starch. Types include: Idaho or russet, good for frying and baking. New potatoes, good for boiling and salads. Long whites, simular to Idahos are also good for frying, baking and boiling.

There are all kinds of different potatoes and the lowest in starch would be any form of red potato. These potatoes are wonderful for boiling and much healthier than a thicker skinned white potato. Basically, if you're looking to get away from starch, try a red potato instead of any white skinned one.

There are Red Potatoes, Russet, Idaho, and Yukon. Red potatoes can be used in stews, soups because they hold together. Russet and Idaho can be baked or mashed. Yukon can be boiled or mashed. They are all about the same in starch.
