People call foods "carbohydrates" when they have a high percentage of carbs. Yes, potatoes have a very high percentage of carbs, so if you are on a low-carb diet, you should probably keep them to a minimum.

Reply by needle (1):
Potatoes HAVE or CONTAIN carbohydrates, but they are not carbohydrates, much like carrots HAVE nutrients but are not "nutrients". However, they are nutritious, so eat them.  add a comment

All foods are made up of carbohydrates, fat, protein and fiber. Potatoes contain a lot of complex carbohydrates, which are also called starch. A balanced diet with meats and vegetables provide nutrients that the body can use as fuel. When your diet lacks protein your body burns muscle, when you do not eat enough carbohydrates you may feel low energy.
