Grey would look good in a black car. It hides dirt rather well. In fact the color black has blue in it's mix as does grey. You do not want colors that clash when choosing an interior color. In addition, if you look at cars on a new car lot, many black cars have grey interiors.

It is really up to you. You could take a sample of the vinyl and hold it up in the interior to get an idea of how it will look when it's done. Then you can make your own design.
