When cats mature, their fur isn't as soft.

Another easy answer. They are new. The fur is fresh and there is something about mama's tounge when grooming them that puts the protein they need in it.

Kitten hair is like human baby hair in the way that the first hair is soft. As kittens mature, their fur becomes adult.
