We will be sitting on the couch and out of no wear my cat will attack me.

Your cat is probably just trying to play with you. Cats love to stalk and pounce on each other, and they love surprising you with it.

Your cat is playing with you. In the wild, it is their instinct to watch their prey and pounce on it by surprise. A house cat does this by instinct, but is doing it to play.
