It has an amino acid called tryptophan in it that is used to produce the neuro chemical serotonin. It is also in turkey in high amounts. The more tryptophan you consume, the more serotonin your brain can make, which makes you happy and sleepy and content. Warm milk is even better, because the warmth is soothing to your tummy.

Milk contains the essential amino acid called tryptophan. Tryptophan is not produced by the body but obtained through certain food products. Tryptophan helps to produce increased levels of the neurotransmitter serotonin in the brain. Serotonin is an important component in regulating sleep and producing an overall feeling of relaxation. Tryptophan supplements have been widely used as a treatment for insomnia.

It is proven that Tryptophan an amino acid which is the building block of protein makes you sleepy. This is the same feeling that you get at Thanksgiving from your turkey dinner. Also the warmth of the milk add to sleep process.

It's psychological. You probably grew up believing milk helps you sleep, and so it does. There is no scientifically proven food that helps you sleep.
