Why does garlic turn blue in pickling jars?

Garlic that has turned blue has most likely been contaminated with blue copper sulfate from copper in the water or from copper tools used in the canning process. The acid brings out the blue color.

More than likely this is some kind of reaction as a result to exposure to certain metals. The acids in the pickling change in appearance.
