Pretty much the same reason they do during the day! They moo to communicate with each other. Sometimes it is a location call - just trying to find out who is around, sometimes it is about food, etc.

Dairy cows will moo at night because of the need to be milked. Fear from the presence of a predator will also cause cows to moo at night.

What is one thing cows and people have in common? We all like to talk, you might not notice during the day that they are talking ecause of daytime noise. Cows are always talking to eachother.
