One definition of stag is a male who attends a social event unaccompanied, also a social gathering of men. In that context, it's understandable that a pornographic film shown during a mens night out is called a stag film.
The term "stag" is associated with males in their prime including other animals besides humans. Socially the term is used for events for males only such as adult movie screenings.
