Watch the part of the squash that is touching the ground. When that "spot" turns to a yellowish orangish color, it is time to harvest it. To keep it fresh, you can wait until the vines dry up before harvesting, which is suggested if you are not cooking it immediately.

You'lll plant acorn squash in the spring after the last frost and in the fall you'll harvest just before the first frost.
