A good substitute for baking cocoa would be unsweetened bakers chocolate. I would melt it first on the stove in a pot. You could also use dark chocolate that is 80% cocoa.

If the recipe also calls for some kind of fat, you can substitute unsweetened baking chocolate and reduce the amount of fat in the recipe.
