I believe that you are refering to his surrender in 1881 when you say "un-Indian-like". It's true that that was not in the general character of Sitting Bull or many of the other resistance leaders, but it was a time of war, and many people do unlikely things in war.

Chief Sitting Bull, famed Indian war chief of the Sioux Tribe led what some consider the greatest Indian victory against the American government at the Battle of Little Bighorn. Yet Sitting Bull, a victim of changing times, was forced to adapt. One such surprising adaptations is his choice to perform in Buffalo Bill's Wild West extravaganza as a "Show Indian"

If by Indian like you mean all Indians are the same and are all peace loving tree huggers you'd be right! Chief Sitting Bull was a holy man who lead his tribe while they were fighting the United States. And considering how the United States were to the Natives, can you blame them?
