The best way to start is to learn shorthand. You'll want to start small and work your way up since there is a lot of memorization. Start with learning the phonetic forms (consonant sounds and combinations). After that learn short forms, which are small words and search for online guides.

The key is practice: several short sessions everyday in order to increase "muscle memory." There are books and online tutorials.

Stenography is another word for shorthand. You really need to take a class. It is symbols that represent letters in words and it really needs lots of repetition and direction. I took it years ago in high school for two years.

Practice on both a stenography pad of paper and on a digital pad, since the digital version is becoming more common. Practice listening and recording a wide range of people so that you improve accuracy and can keep up with their speech.
