Put all of the relevant party information (date, time, location, etc.) on the invitation, and then write something like "please bring a dish to share". If you want to be more specific, you can assign some people salads, desserts, etc.

Write that it is a potluck and request them to please bring an appetizer, main dish or dessert. You will want to ask them to let you know what they plan to bring so that you don't end up having all desserts and no main course or duplicates of items.

On the invitation, you should include what dish certain guests shoudl bring. For example, if their last name begins with A-G, they should bring a side dish. H-L could bring a dessert. M-P could bring a salad. Q-Z could bring drinks. I would include this entire breakdown on each invitation so the guests realize there will be pleanty of food.

Etiquette says that you should never ask a guest to bring something to a party. But, if you want to do a potluck, then say something along these lines: "You're invited to a potluck party for Mr. x. Please bring your favorite dish to help us celebrate Mr. X's life." Then add the rest of the necessary information.
