What should I know about having a formal Mexican dinner?

I will be hosting a formal Mexican dinner.

The meal should consist of an appetizer, entree, and dessert. You can easily find the recipes for all parts online. Stick with recipes that require utinsils since you don't want messy faces and hands at a formal dinner. Offer dips and salsas of various spiciness to accomodate all guests.

It depends on the 'formality'. Normally, you would serve a brothy soup for the first course, then a dry 'soup' (like rice or pasta), then the main course, then dessert.
