What should I know about GFCI and garage freezers?

A GFCI is simply a circut breaker. It will prevent faulty devices from causing a fire if they short out.

I would not connect a freezer into a GFCI plug; if any interrupt occurs, your freezer looses power and the trouble really begins. I useda GFCI connection out of desperation several years ago and I learned my lesson the hard way. All the freezer food had to be thrown away one Monday afternoon after a thunderstorm the previous Saturday.

These types of freezers usually do run out of the fluid pretty quickly. You will need to buy some more liquid and have it replaced withing five or ten minutes.
