Warheads candies have malic acid in them, which is used in many foods to make them sour. They also have citric acid and ascorbic acid, which aren't quite as sour as malic acid. To make the candy even more sour, there is malic acid in the center of the candy.

Have you ever noticed that white powder on the surface? That's alum, a very bitter substance. That's why a Warhead is so sour when you first pop it in your mouth. Once you've swallowed all the alum, the candy is sweet. The inner core is probably some acidic mixture.
