What makes grease black?

Cooking grease isn't black.

Most fuels including cooking fats and oils burn at various temperatures. When they burn most will end up producing some type of carbonized substance that will usually be of a dark color usually black. This also accounts for the fact that some cooking products when burned burn black since they become covered in a carbon shell.

Grease can get black with the contact of asphalt. It can be natural asphalt occurring in natural deposits, or asphaltum, or it can be man-made. Residue that is formed when manufacturing grease can also make it black. Also, extensive use of grease will make the grease color very dark, which may look black.
