The bread dough should be firm and not loose. It also should be fluffy which means that the bread will rise when cooked. And it can be cooked in a regular oven or in a convection oven.

The dough should feel stretchy and pliable, not hard or overworked. In some machines, you can interrupt the mixing or kneading cycle and look, but not in all.
